A Seat at the Chef’s Table. In Conversation with Chef Zachos Papadakis

Zachos Papadakis, chef at Teatro Beachside Bliss

Every memorable dining experience begins long before the first dish reaches the table. It starts with a story, a philosophy, and a person whose passion quietly shapes every detail behind the scenes.

For Chef Zachos Papadakis, cooking is far more than technique or presentation. It is a way of preserving memories, expressing creativity and transforming exceptional local ingredients into experiences that stay with people long after the meal has ended.

Having earned recognition from some of Greece’s most respected culinary institutions and built his career through continuous exploration, collaboration and travel, Chef Papadakis believes that true gastronomy is rooted in authenticity. Every destination, every conversation and every new flavour becomes part of his creative journey, always leading him back to what inspires him most: the richness of Greek cuisine and the remarkable produce of Crete.

At Teatro Beachside Bliss, this philosophy comes to life through a menu that celebrates sharing, seasonality and refined Mediterranean flavours in a setting where the sea, music, hospitality and gastronomy become one seamless experience.

We sat down with Chef Zachos Papadakis to talk about the journey that shaped him, the memories behind his creations and the vision that defines the culinary identity of Teatro Beachside Bliss.

The Journey

When did you realise that cooking was your true calling?

I believe I realised it the moment I had my very first “trial by fire” in the kitchen, when I was around ten years old. From that day on, I never stopped creating, experimenting, and searching for new flavours. That first experience made me understand that cooking would never be just a profession—it would become my way of expressing myself.

Throughout your career, you’ve received recognition from some of Greece’s leading culinary institutions and also participated in MasterChef. How have these experiences shaped you, both professionally and personally?

I’ve had the privilege of being recognised by institutions such as Athinorama and the FNL Best Restaurant Awards, while my participation in MasterChef was another valuable chapter in my journey. Each of these experiences brought memorable moments and encouraged me to keep evolving.

That said, I don’t believe a chef should be defined by awards or publicity. A chef is defined by consistency, dedication, and the experience they create for every guest who trusts them. That’s what truly matters to me.

What made you say “yes” to Teatro Beachside Bliss?

Teatro is much more than another restaurant by the sea. I saw the opportunity to create a true culinary destination where Cretan hospitality meets a contemporary interpretation of Mediterranean cuisine. That creative freedom was, without a doubt, what inspired me to become part of this journey.

All-day dining, thoughtfully crafted and beautifully served.

The Philosophy

If you had to describe your culinary philosophy in just three words, what would they be?

Quality. Simplicity. Identity.

How important are local ingredients to you, and how do they influence your creations?

They are the foundation of everything I cook. When you work with exceptional ingredients, there’s no need to disguise them. I prefer using techniques that respect the product and allow its natural character to shine, rather than altering it.

Where does a new dish begin for you—with an ingredient, a memory, or an idea?

Most often, it begins with a memory. It could be a flavour I discovered while travelling, a particular aroma, an image, or even a person. Then comes the ingredient, and gradually everything comes together around that story.

I never travel to imitate flavours. I travel to understand why a particular taste means something to the people of a place—and how I can transform that feeling into a new memory for someone else.

The Teatro Experience

Teatro has a very distinctive atmosphere. What does this restaurant represent to you, and what kind of experience do you hope guests take away?

I want every guest to leave having experienced much more than a great meal. For me, the cuisine, the hospitality, the music, and the atmosphere all belong to the same story. When these elements come together naturally, they create something people remember.

What makes Teatro’s menu different from a typical beachfront restaurant?

We don’t follow the obvious path. Our menu is built around the philosophy of sharing, clean flavours, and dishes that combine Greek culinary heritage with contemporary techniques and refined presentation.

If someone were visiting Teatro only once, which three dishes would you recommend without hesitation, and why?

Burrata Salad, because it perfectly expresses the beauty of exceptional ingredients and balanced flavours.

Fish with Wild Greens, because it reflects the essence of the Greek sea, seasonality, and simplicity.

Taramosalata, because it’s one of Greece’s most iconic dishes, reimagined with a contemporary approach while remaining true to its authentic character.

When do you know that a dish has truly succeeded?

When guests don’t need to say very much. When conversation naturally pauses because everyone is focused on the food, and the plate returns completely empty.

Every plate celebrates exceptional ingredients, Mediterranean flavours and the joy of gathering around the table.

A Final Invitation

If you could describe the perfect evening at Teatro with a single image, what would it be?

A table by the sea just before sunset. A glass of wine. Beautiful dishes arriving one after another in the centre of the table, inviting everyone to share not only the food, but the moment itself.
